Mango and Coconut Energy Bites for Training Days

Why This Recipe Works for Athletes

These mango and coconut energy bites are a portable, no-cook training snack that delivers fast carbohydrates from dried mango and oats alongside healthy fats from desiccated coconut and chia seeds. Ideal as a pre-session snack 60–90 minutes before shorter efforts, or as a between-session refuel on high-volume training days. Each bite contains approximately 80 calories and 12g of carbohydrate.

Ingredients

  • 150g rolled oats
  • 80g dried mango, roughly chopped
  • 40g desiccated coconut (plus extra for rolling)
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons chia seeds
  • 2 tablespoons almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Blitz the rolled oats in a food processor for 10–15 seconds to break them down slightly — you want a rough flour with some whole oats remaining.
  2. Add the dried mango to the processor and pulse 5–6 times until the mango is in small pieces but not fully puréed.
  3. Transfer the oat and mango mixture to a large mixing bowl. Add the desiccated coconut, chia seeds, almond butter, honey, vanilla, and salt.
  4. Mix thoroughly with a spoon, then use your hands to bring the mixture together. It should clump when pressed — if too dry, add an extra teaspoon of honey.
  5. Roll into 14–16 balls roughly the size of a golf ball. Roll each ball in extra desiccated coconut to coat.
  6. Refrigerate for at least 30 minutes before eating. Store in an airtight container in the fridge for up to 5 days, or freeze for up to one month.

Nutrition Notes

Per bite: approximately 80 kcal, 12g carbohydrate, 3g fat, 2g protein. These bites are naturally gluten-free if you use certified GF oats. Swap almond butter for sunflower seed butter for a nut-free version suitable for training groups. For a higher-protein version, add a tablespoon of vanilla protein powder to the mix and reduce honey by one tablespoon to compensate.
