Slow-Roasted Root Vegetable and Chicken Traybake for Athletes

Why This Recipe Works for Athletes

A one-tray roast is the easiest way to get a full recovery meal on the table after a long autumn training day without standing over multiple pans. Root vegetables are a slow-release carb source that pairs well with lean chicken protein, and the whole thing can go in the oven while you shower and stretch after a session.

Ingredients

  • 4 chicken thighs, skin on, bone in
  • 2 large carrots, chopped into chunks
  • 1 large parsnip, chopped into chunks
  • 300g sweet potato, cubed
  • 1 red onion, cut into wedges
  • 3 garlic cloves, unpeeled
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 lemon, halved

Instructions

  1. Preheat the oven to 200°C (fan 180°C).
  2. Toss the carrots, parsnip, sweet potato, and red onion with 1 tbsp olive oil, thyme, salt, and pepper on a large baking tray.
  3. Push the vegetables to the edges and place the chicken thighs skin-side up in the centre, along with the garlic cloves.
  4. Drizzle the chicken with the remaining olive oil and season well.
  5. Roast for 40–45 minutes, until the chicken skin is crisp and the vegetables are tender, turning the vegetables once halfway through.
  6. Squeeze the roasted lemon halves over everything before serving.

Nutrition Notes

This is a carbohydrate- and protein-balanced recovery meal — the root vegetables provide slow-release carbs to refill glycogen, while the chicken thighs give a higher fat content than chicken breast, which helps with satiety after a long session. Swap the chicken thighs for breast if you want a leaner version, or add a tin of chickpeas to the tray for a vegetarian option.
