Roasted Pumpkin and Ginger Soup for Recovery

Why This Recipe Works for Athletes

Pumpkin brings easily digestible carbohydrate and a good hit of beta-carotene, while fresh ginger adds a mild anti-inflammatory effect that’s genuinely welcome after a long, cold training session outdoors. It’s a soft, warming option when appetite is low post-training but you still need to refuel, and it reheats well for a quick lunch the next day between off-season sessions.

Ingredients

  • 1kg pumpkin or butternut squash, peeled and cubed
  • 1 onion, roughly chopped
  • 2 tbsp olive oil
  • 3cm fresh ginger, peeled and grated
  • 2 garlic cloves, crushed
  • 800ml vegetable or chicken stock
  • 100ml coconut milk or single cream
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 200°C (fan 180°C). Toss the pumpkin and onion in the olive oil and roast for 30 minutes, until the pumpkin is soft and lightly caramelised at the edges.
  2. Transfer the roasted vegetables to a large pot with the ginger, garlic and stock. Bring to a simmer for 10 minutes.
  3. Blend until smooth using a stick blender or countertop blender.
  4. Stir in the coconut milk or cream and season to taste.
  5. Reheat gently if needed and serve hot, with crusty bread if you want extra carbohydrate.

Nutrition Notes

This makes a lighter recovery option rather than a high-protein one on its own — pair it with a protein source (grilled chicken, a lentil side, or a boiled egg) if it’s your main post-training meal rather than a starter or light lunch. It freezes well in individual portions, which makes it a convenient batch-cook option for busy off-season weeks with variable training times.
