Recovery Chicken and Sweet Potato Bowl

A balanced recovery meal with lean protein, complex carbs, and plenty of nutrients. This bowl is easy to batch-cook for the week ahead, making it perfect for busy training blocks.

Ingredients (Serves 2)

  • 2 chicken breasts
  • 2 medium sweet potatoes, cubed
  • 1 tin of black beans, drained and rinsed
  • 1 red pepper, diced
  • Large handful of spinach
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: avocado, lime, hot sauce to serve

Instructions

  1. Preheat oven to 200°C. Toss sweet potato cubes in olive oil, paprika, salt and pepper. Roast for 25-30 minutes until soft and slightly crispy
  2. Season chicken breasts and pan-fry or grill for 6-7 minutes per side until cooked through. Rest for 5 minutes, then slice
  3. Warm the black beans in a small pan with a splash of water
  4. Assemble bowls: sweet potato, sliced chicken, black beans, diced red pepper, and spinach
  5. Top with avocado slices, a squeeze of lime, and hot sauce if desired

Meal Prep Tip

Make a double batch on Sunday evening and portion into containers for the week. The sweet potato and chicken keep well in the fridge for 3-4 days. Add the spinach and avocado fresh when serving.
