Protein Waffles with Maple Syrup: Race Morning Fuel

These protein-fortified waffles deliver a powerful pre-race fuel combination: fast-releasing carbohydrates from the flour and maple syrup for immediate energy, alongside whey protein to protect muscle tissue during competition. Ingredients
- 100g plain flour
- 30g vanilla whey protein powder
- 1 tsp baking powder
- 1 tbsp caster sugar
- 1 medium egg
- 150ml milk (dairy or oat milk)
- 1 tbsp melted butter or coconut oil
- 2 tbsp maple syrup to serve
- 1 banana, sliced, to serve
Instructions
- Preheat your waffle iron and lightly grease with cooking spray or a small amount of butter.
- In a large mixing bowl, combine the plain flour, protein powder, baking powder, and caster sugar.
- In a separate jug, whisk together the egg, milk, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined — a few lumps are fine; do not overmix or the waffles will be dense.
- Pour approximately 120ml of batter into the preheated waffle iron and cook for 3–4 minutes until golden brown and crisp. Repeat with the remaining batter.
- Serve topped with sliced banana and maple syrup.
