Mushroom and Lentil Bolognese for Athletes
Why This Recipe Works for Athletes
Lentils bring plant protein, iron and slow-release carbohydrate in one pot, while mushrooms add umami depth and bulk without much added calorie load — useful if you’re managing weight through a lower-volume off-season block. It’s a good meat-free night option after a long ride or run, and reheats well for next-day lunch straight from the fridge.
Ingredients
- 2 tbsp olive oil
- 1 onion, finely diced
- 2 carrots, finely diced
- 2 celery sticks, finely diced
- 2 garlic cloves, crushed
- 300g chestnut mushrooms, sliced
- 2 x 400g tins green or brown lentils, drained
- 400g tin chopped tomatoes
- 2 tbsp tomato purée
- 1 tsp dried oregano
Instructions
- Heat the olive oil in a large pan and sauté the onion, carrot and celery over medium heat for 8-10 minutes, until softened.
- Add the garlic and mushrooms, and cook for a further 5-6 minutes until the mushrooms release and reabsorb their moisture.
- Stir in the lentils, chopped tomatoes, tomato purée and oregano, plus a splash of water if the mixture looks dry.
- Simmer uncovered for 20-25 minutes, stirring occasionally, until thickened.
- Season to taste and serve over pasta of your choice, with grated cheese if you like.
Nutrition Notes
The sauce alone (without pasta) provides roughly 18-20g of protein per serving across four servings, with a good iron contribution from the lentils — useful for endurance athletes, who are at higher risk of low iron status. Pair with wholemeal pasta for extra fibre and slower-release carbohydrate, or a smaller portion of white pasta the night before a hard session if you want faster-digesting carbs.
