Iron-Rich Beef and Spinach Stir-Fry for Endurance Athletes

Why This Recipe Works for Athletes

Endurance athletes — especially women, vegetarians and anyone in a heavy training block — are at elevated risk of iron deficiency, which can quietly undermine performance and recovery long before it shows up as a diagnosed problem. Lean beef delivers highly bioavailable haem iron, and pairing it with vitamin C-rich vegetables (peppers, and a squeeze of lime at the end) improves absorption further. Serve this as a post-training dinner a few times a week if you’re prioritising iron intake.

Ingredients

  • 300g lean beef strips (rump or sirloin), thinly sliced
  • 200g baby spinach
  • 1 red pepper, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sesame oil
  • 1 tbsp vegetable or rapeseed oil, for cooking
  • 250g cooked brown rice or rice noodles
  • 1 lime, cut into wedges

Instructions

  1. Heat the vegetable oil in a wok or large frying pan over high heat until shimmering.
  2. Add the beef strips in a single layer and sear for 60-90 seconds per side until browned but not overcooked. Remove and set aside.
  3. Add the garlic, ginger and red pepper to the same pan and stir-fry for 2 minutes.
  4. Add the spinach and stir-fry for a further 1-2 minutes until just wilted.
  5. Return the beef to the pan, add the soy sauce and sesame oil, and toss everything together for 30-60 seconds until combined and heated through.
  6. Serve immediately over brown rice or rice noodles, with a lime wedge to squeeze over just before eating.

Nutrition Notes

Approximately 480 kcal, 38g protein and 45g carbohydrate per serving (with rice), making this a solid post-training recovery meal that also supports iron status over a training block. Squeezing the lime over the dish right before eating — rather than cooking it in — preserves more of the vitamin C that helps iron absorption. Avoid having tea or coffee with this meal, as tannins can inhibit iron uptake; leave at least an hour either side if you want a post-dinner cup.
