High-Protein Chicken Fajita Bowl for Recovery

Why This Recipe Works for Athletes

This one-pan fajita bowl pairs lean protein with fast-digesting carbs from rice and peppers, hitting the roughly 3:1 carb-to-protein ratio that’s a solid post-training target. It’s quick enough to make after an evening session and reheats well, so batch-cooking it ahead of a busy training week means recovery food is ready when you get home hungry.

Ingredients

  • 2 chicken breasts, sliced into strips
  • 2 bell peppers (mixed colours), sliced
  • 1 red onion, sliced
  • 2 tsp fajita seasoning (or a mix of paprika, cumin, garlic powder, chilli)
  • 1 tbsp olive oil
  • 250g cooked rice (white or brown)
  • 1 tin black beans, drained and rinsed
  • 1 avocado, sliced
  • Juice of 1 lime
  • Fresh coriander, to serve

Instructions

  1. Toss the chicken strips in the fajita seasoning until evenly coated.
  2. Heat the olive oil in a large pan or wok over medium-high heat.
  3. Add the chicken and cook for 5-6 minutes until browned and cooked through, then remove and set aside.
  4. In the same pan, add the peppers and onion and cook for 4-5 minutes until softened but still with some bite.
  5. Return the chicken to the pan, add the black beans, and toss together for 1-2 minutes until heated through.
  6. Serve over the cooked rice, topped with sliced avocado, a squeeze of lime and fresh coriander.

Nutrition Notes

Roughly 480 kcal, 40g protein and 50g carbs per serving (based on four servings) — a solid post-training meal within the 30-60 minute recovery window if you’re eating straight after training, or just as good as an evening meal on a harder training day. Swap the rice for extra beans or quinoa if you want it lower-GI, or leave out the beans for a lower-carb version on an easy day.
