Rice Paper Rolls with Prawn and Avocado: Light Pre-Race Snack

Light, fresh, and easy to digest — these prawn and avocado rice paper rolls are an ideal pre-race snack or light recovery bite after a morning swim or run. The rice paper wrappers provide a gentle carbohydrate base without the heaviness of bread, while the prawns deliver lean protein and the avocado adds healthy fats that support sustained energy without GI distress.
Ingredients
- 8 rice paper roll wrappers (22cm)
- 200g cooked king prawns
- 1 ripe avocado, sliced
- 1 small cucumber, cut into thin matchsticks
- 1 medium carrot, peeled and julienned
- 50g vermicelli rice noodles, soaked and drained
- A handful of fresh mint and coriander leaves
- Dipping sauce: 2 tbsp tamari, 1 tbsp lime juice, 1 tsp sesame oil, ½ tsp grated ginger
Instructions
- Soak the vermicelli noodles in boiling water for 3-4 minutes until soft, drain, and set aside to cool.
- Fill a large shallow bowl or plate with warm water. Dip one rice paper wrapper for 15-20 seconds until it becomes pliable but not too soft — it continues to soften after removal.
- Lay the wrapper flat. Place 2-3 prawns, a slice of avocado, a small bundle of noodles, a few sticks of cucumber and carrot, and some herb leaves in a line across the lower third of the wrapper.
- Fold the bottom edge up over the filling, then fold in the sides, then roll tightly away from you to seal. Repeat with remaining wrappers and filling.
- Mix together the dipping sauce ingredients. Serve rolls immediately with the dipping sauce on the side.
