Frozen Watermelon Granita: A Pre-Race Summer Refresher

Why This Recipe Works for Athletes

Watermelon is one of the best pre-race summer foods — high water content for hydration, natural sugars for quick energy and citrulline amino acids that have been shown in studies to improve blood flow and delay muscle soreness. This granita freezes overnight and can be eaten as a cooling pre-race treat, a mid-session refresher or a light post-race dessert on hot summer days.

Ingredients

  • 600g seedless watermelon flesh (roughly half a small watermelon)
  • Juice of 1 lime
  • 1 tbsp caster sugar or honey
  • Pinch of sea salt
  • Fresh mint leaves to serve (optional)

Instructions

  1. Blend watermelon flesh, lime juice, sugar and sea salt until completely smooth.
  2. Pour into a shallow baking tray or freezer-safe container no more than 3cm deep.
  3. Freeze for 1 hour, then scrape and break up the frozen edges with a fork. Return to the freezer.
  4. Repeat the scraping process every hour for 3–4 hours total until the granita is light, fluffy and fully frozen throughout.
  5. Scoop into glasses and serve immediately with fresh mint. Store covered in the freezer for up to 1 week.

Per serving (makes 4): approximately 55 calories, 14g carbohydrates, 0.5g protein, 0g fat. A light, quick-energy source — ideal 30–45 minutes before a summer session or a hot race. The citrulline in watermelon (around 250mg per 100g) may help dilate blood vessels and support a strong swim start. For extreme heat racing, add an extra pinch of sodium for a light electrolyte boost.
